Salmon with a Strawberry Balsamic Chutney
Whether enjoyed as a salad or over a bed of rice, this dressing is sure to be a crowd pleaser! The sweetness of the berries are offset with the red onion and feta, and this is an easy dish to enjoy hot or cold!
Versatility is key! I love love love when I can make dishes that can also be turned into a fantastic lunch the next day. Added bonus…EASY lunch the next day. As I often pack my lunch, this becomes a lifesaver in the morning. What I enjoy about this salmon sauce is that it gives the fresh summery strawberries a chance to simmer down a bit in the glaze and absorb that flavor, so it really dulls the sweet and pulls out a deeper berry hint that goes really well with a savory meal. When combined with the fresh strawberries, it’s a fun contrast that teeters on both sweet and savory. For a light dinner, this salmon could be served with some fresh steamed vegetables and quinoa, then used the next day as a cold salad! The sauce was fantastic however it was served.
Back to the basics. The idea behind this dish isn’t as far out of the box as I would typically like-I’ve probably made 100 strawberry spinach salads before, and having crumbled salmon on top is delicious but not too uncommon. What I was hoping to see was how I could use the berries in a few different ways within the same dish and this did not disappoint! I cooked the balsamic just long enough to soften the strawberries, but not long enough to form a glaze, so it still had the consistency of a salad dressing, or a great sauce poured over a grain. Sometimes, a fabulous meal is made with what is right in front of you-simple, easy, and oh so delicious!

Salmon with a Strawberry Balsamic Chutney
Equipment
- Kitchen knife
- Saucepan
- Skillet
Ingredients
- 1/4 cup Balsamic Vinegar
- 1 cup Strawberries
- 2 pieces Salmon
- 1/4 sliced Red Onion
- 1/4 cup Crumbled Feta Cheese
- 2 handfuls Mixed Greens
Instructions
- In saucepan, add half of the strawberries and the balsamic vinegar, cooking until berries are softened.
- In skillet, pan fry the salmon fillets.
- Serve salmon with the balsamic strawberries atop, with feta and sliced red onions. I served this over a bed of greens, but this would also be great with rice or steamed vegetables.
