Cucumber and Radish Salad with Dill and Feta
A great, cool salad for those hot summer days! Tangy lemon and dill perfectly complement the cucumber and radish as a side dish or full meal!
Cook for the temperature. On those hot afternoons, it’s hard for me to get excited about spending time over a stove. While this recipe does suggest a quick sautéed shrimp, they are served cool, and could easily be swapped for crumbled salmon or another cold protein to avoid the cooking heat all together. No matter what you choose as your centerpiece, dill and cucumber are a winner for beating the summer heat!
Ain’t nobody got time for that! Maybe it’s the heat, maybe pure laziness, but along with avoiding the stove, I also avoid…a lot of effort! I’d rather be spending my days outside then preparing food for the family inside. Any dishes that not only can be made ahead of time, but are even better when given time to marinate are winners in my book! This salad is great over lettuce, served with pita chips as a dip, in wraps, or as a side for grilled meats!

Cucumber and Radish Salad with Dill and Feta
Equipment
- Skillet
- Mixing bowl
- Kitchen knife
Ingredients
- 8-12 large Shrimp
- 1 tbsp Olive Oil
- 1/4 tsp Garlic Powder
- 1/4 tsp Paprika
- Salt and Pepper
- 1 medium Cucumber
- 4 medium Radish
- 1/4 small Red Onion
- 1/3 cup Crumbled Feta
- 4 handfuls Mixed Greens
Dressing
- 2 sprigs Fresh Dill
- 1/2 squeezed Lemon
- 1 tbsp White Wine Vinegar
- 1 tbsp Mayonnaise
- Salt and Pepper
Instructions
- Heat oil in skillet. Add shrimp and season with paprika, garlic powder, salt and pepper. Flip to cook thoroughly. Remove and set aside.
- In mixing bowl, combine dressing ingredients and mix well.
- Thinly slice radishes, cucumbers and red onion, stirring into dressing.
- Sprinkle in feta and stir gently to combine.
- Serve cucumber salad over a bed of mixed greens. Top with shrimp and garnish with more dill or a wedge of lemon. Enjoy!
