Cucumber Apple Mint Smoothie

Gearing up for the season of hosting guests on a hot summer day just calls for some refreshing new beverages! This family friendly take on a healthy beverage will leave no one missing the ice cream!

Setting expectations. When life gives you lemons, you make lemonade, right? Well, in this case, when the the produce drawer gives you cucumbers and mint, you make…soup? Yes, the inspiration for this drink actually came from a cucumber mint soup I had seen years ago. After several attempts of making this, it either turned out too bland, or just not smooth enough to be enjoyable. Realizing I either need to invest in a higher quality blender to liquify the cucumber and mint (and this soup might be really great…the flavors were on point-execution just not so much), or I need an alternative strategy. Alternative strategy won this battle 🙂

The Apple of Temptation. Having a sweet tooth can sneak up on anyone, especially in the summer with so many delicious cold treats. For a few years now, I’ve opted for a lower sugar diet, but that doesn’t mean I don’t have a craving for a satisfying sweet treat every now and then! Having the ingredients from my failed soup, I remember growing up, my mom always tossed apples in lemon juice to keep them from turning brown in salads, and this tangy contrast has stuck with me. With the hint of lemon and mint dancing around this flavor memory, my mind immediately went to the gorgeous apples on my counter, and it was a fabulous addition! Depending on how you enjoy your sweet treats, this could be pureed down further to freeze, or enjoyed chilled. I had this alongside breakfast outside, and was just what I needed to start the day!

Cucumber Apple Mint Smoothie

This light and refreshing beverage is great for a hot afternoon treat or an accompaniment for your brunch guests. Great to be made ahead!

Equipment

  • Blender
  • Kitchen knife

Ingredients
  

  • 1 tbsp Yogurt
  • 1/2 squeezed Lemon
  • 1 bunch Mint (about 4 hearty stalks)
  • 1 large Cucumber
  • 1/2 medium Apple

Instructions
 

  • This super simple snack takes almost no effort! Slice the lemon and squeeze, combining with yogurt, mint and apple, cut into pieces. Place all in a blender and add larger pieces of cucumber, peeling first. Blend until smooth and garnish with more mint leaves! This is great if made ahead and chilled prior to serving.
