Curry and Avocado Deviled Tomatoes

The hostess with the mostess. In my life I’ve gone through various phases of dietary restriction (experiments, really) ranging from keto to vegan. One thing that many can relate to is the anxiety that comes with gatherings. Whether professionally prepared or a potluck meal, often times there is not the level of thought put in to specific food restrictions for all. This recipe celebrates the beautiful fall tomato (bonus points if you can use a variety of colors!), but also doubles as a great vegan option-that’s not just for your vegan friends!
The chameleon. Just like its counterpart, a deviled tomato can come in a million different flavors and styles! Based on the theme of the party or what meal you are pairing this with, go wild! BLT? Spicy chipotle? Garlic and olives? Smoked paprika? Not only are there so many ways to flavor the filling, but the texture of this filling is such a perfect base to hold many beautiful garnishes! Even more fun for a party!

Curry and Avocado Deviled Tomatoes
Equipment
- Mixing bowl
- Kitchen knife
Ingredients
- 6 small Tomatoes
- 1/2 large Avocado
- 1/4 medium Red Onion
- stalk Celery
- 2 tbsp Mayo could use vegan
- 1/4 tsp Curry Powder
- 1/4 tsp Chili Powder
- 1/4 tsp Garlic Powder
- 1/8 tsp Dried Mustard
- Salt and Pepper
- 1 handful Mixed Greens (optional for serving)
Instructions
- Slice tomatoes in half and hollow out the center, creating bowls.
- Chop the insides of the tomato and place in a mixing bowl.
- To the mixing bowl, add finely chopped celery and red onions, as well as avocado and mayo. Mash together.
- Seasoning with all dried ingredients and stir, adjusting to preference.
- On serving platter place mixed greens and tomatoes, filling with mixture. Sprinkle with additional chili powder for garnish. Enjoy!
