Easy Marinated Cherry Tomatoes
A perfect use for those garden tomatoes! Delicious fresh side, garnish on any protein, or salad ingredient! Tailor to any seasonal herbs!
Keep it simple! Tomatoes are so delicious just as is that I find myself eating these raw in most scenarios. But, I love the flavors they provide, especially with the natural companion of balsamic and herbs. This recipe is very simple to pull together and provides a tasty bite throughout the week ahead, keeping your time in the kitchen to a minimum but the flavors on your plate to a max!
Long live the Queen! I love fresh tomatoes on…anything! But, bringing in those beautiful red gems from the garden starts the clock on shelf life. By marinated these, the lemon and vinegar help preserve them a little longer, and soak up the delicious flavors you marinate them in, giving a ready to eat topping for so many things throughout the week!

Easy Marinated Cherry Tomatoes
Equipment
- Mixing bowl/container with lid
- Kitchen knife
Ingredients
- 1/2 squeezed Lemon
- 2 tbsp Olive Oil
- 1 tsp Balsamic Vinegar
- 1 clove Garlic
- 1 medium Shallot
- 3-4 leaves Fresh Basil
- 1 sprig Thyme
- 1/4 tsp Crushed Red Pepper
- Salt and Pepper
- 2 cups Cherry Tomatoes
Instructions
- In container, add lemon juice, olive oil, vinegar, garlic, shallots and herbs. Mix well and add red pepper, salt and pepper.
- Slice tomatoes in half and add ribbon cut basil and fresh thyme. Other herbs would be great here as well!
- Stir all together, lid container, and keep cool until ready to serve. Enjoy!Great served on salads, over grilled meats, or as an addition to a cheese board!
