Lemon Thyme Green Beans with Toasted Almonds
A fresh and crisp side that’s great for any meal! A slight steam on the beans allows them to absorb those delicious flavors, worth the added step!
The art of steaming. While water boiling seems pretty darn basic, there is a subtle method change here that really does make a difference! When you submerge green beans fully into water, you dilute some of the flavor as the water heats up. By using the skillet with just a small amount of water, the hot air cooks the beans and gives them a crispy texture, while allowing them to retain their delicious taste! A great little trick to keep in your back pocket!
Try a little tenderness. The act of steaming these beans goes further than just texture. By softening their crisp exterior, they soften and absorb the flavors of the dressing, helping to infuse the whole dish with your seasonings. Add the beans while they are still warm to give some time for everything to mix before placing in the fridge. While the beans cool, they will be infused with that delicious lemon and garlic!!

Lemon Thyme Green Beans with Toasted Almonds
Equipment
- Skillet with lid
- Mixing bowl
- Kitchen knife
Ingredients
- 2 tsp Olive Oil
- 1/2 squeezed Lemon
- 1 clove Garlic
- 2 sprigs Thyme
- 1/2 tsp Dijon Mustard
- 1/3 cup Slivered Almonds
- 3 handfuls Fresh Green Beans
- Salt and Pepper
- 1/3 cup Shaved Parmesan Cheese Try for an aged variety if possible
Instructions
- In skillet, toast almonds until browned. Set aside to cool.
- Clean and trim green beans and cut in half or thirds, depending on size, to create bite size pieces.
- In warm skillet, add green beans with a small amount of water. Cover to steam. *This technique will preserve more crisp and flavor than submerging the beans in water.
- In mixing bowl, combine olive oil, lemon juice, mustard, thyme, garlic, salt and pepper and mix well. Add about 1/3 of the parmesan cheese, sliced thin, to give flavor. Stir well.
- When beans are easily inserted with a fork but not mushy, remove lid and allow any remaining water to cook off. Turn off heat and give a few minutes to cool slightly.
- Add to mixing bowl and toss in liquids. Chill until ready to serve.
- Toss in remaining shaved parmesan and toasted almonds when ready to serve. Enjoy!
