Broccoli Stalk Fries with Herbed Ranch

A delicious way to use the entire broccoli stalk! These fries crisp up and are a perfect side for your next backyard cook out!

Waste not, want not. I hate to see food go to waste, especially when there are so many great ways to use all parts! When it comes to this beautiful vegetable, the florets often take the spotlight, as they are a bit easier to eat. While the stalks are great in soups, riced, or sautéed, because of their consistency, they are often tossed. That very disliked characteristic is what makes the perfect fry!

All about that sauce! A fry, made out of anything, is really only as good as what you serve it with! Be creative here with the dipping sauce to complement whatever you are having as an entrée. Barbeque, parmesan, curry, chili, mayo…all great options to make the fry a unique flavor. As I sort through fresh produce, I love highlighting the herbs from the garden as well, and this ranch is a fabulous way to do so! I’d encourage you to make this a bit ahead of time. The longer it sits, the more the herbs open up and bring out that great flavor!

Broccoli Stalk Fries with Herbed Ranch

Equipment

  • Air Fryer (could use oven)
  • Vegetable Peeler
  • Kitchen knife
  • Mixing bowl

Ingredients
  

Dressing

  • 2 tbsp Mayo (could use yogurt if not keto)
  • 1 tbsp Sour Cream
  • 1/2 squeezed Lemon
  • 1 stalk Green Onion
  • 2 sprigs Fresh Parsley
  • 2 sprigs Fresh Dill
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • Salt and Pepper

Fries

  • 2-3 stalks Broccoli
  • 1 tbsp Olive Oil
  • 1/4 tsp Chili Powder
  • 1/4 tsp Smoked Paprika
  • Salt and Pepper

Instructions
 

  • Peel stalks and slice into matchstick size strips.
  • In mixing bowl, toss broccoli in olive oil and seasonings, coating well. Lay on sheet in air fryer or oven and cook until browned on the outside.
    *option to roll in bread crumbs or parmesan cheese for more crunch.
  • While cooking, in mixing bowl, combine dressing ingredients and stir well.
  • Serve fries hot with a bowl of dressing, and extra parsley for garnish. Enjoy!
