Roasted Broccolini with Garlic Bleu Cheese Butter
So easy, yet so transforming! The strong flavors in this simple sauce steal the show over any vegetable! A great side dish for any entrée!
Let the creativity begin! While I love the flavors here, the presentation of this dish comes with a few choices. Room temperature, butter and bleu cheese will be in a fairly solid form, which works nicely to apply a dollop on top of your broccolini when serving. Or, if you’d like a bit more sauce-like feel (I’m in this camp and the recipe reflects that), I would go heavy on the pour of olive oil and squeeze of lemon to give more liquid, and right before serving, make sure the sauce is hot to keep the butter melted. The thin drizzle really does a lot for flavor distribution in addition to just looks!
The plan of attack. There are many ways to go from point A to point B with cooking broccoli, and all will result in an edible vegetable on your plate. Nutritionally speaking there are differences of course, but I’m not here to dictate which methods is superior. Taste wise, I like this dish with roasting the broccoli, because I love the contrast that a bit of char on the leaves gives to the creamy butter sauce. Roasting cooks the exterior first, which creates a nice and somewhat firm stalk, vs the consistent soft form of boiling for example. In my opinion, don’t shy away from that char either! There is a classy element to a nice char with a great dressing to jazz up your everyday dinner plate!

Roasted Broccolini with Garlic Bleu Cheese Butter
Equipment
- Baking Sheet (or air fryer)
- Mixing bowl-microwave safe
- Kitchen knife
- Fork or whisk
Ingredients
- 3 handfuls Broccoli or Broccolini about 4 cups
- 2 tsp Olive Oil
- Salt and Pepper
Sauce
- 1 clove Garlic
- 3 tbsp Butter
- 1/2 squeezed Lemon
- 2 tsp Olive Oil
- 3 tbsp Bleu Cheese Crumbles
- Salt and Pepper
Instructions
- In oven (or air fryer), lay broccolini and drizzle with olive oil, salt and pepper. Shake to coat well and roast until outsides are crispy and stalk is easily inserted with a fork.
- While roasting, in a bowl, heat butter.
- Into hot butter, add minced garlic, olive oil, lemon, olive oil and blue cheese.
- Using fork, mash bleu cheese until it's a smooth paste (use whisk if making large quantities).
- Adjust lemon and olive oil for a thinner sauce.
- When broccoli is cooked, make sure the sauce is hot and stir well for a sauce consistency. Drizzle over broccoli. Enjoy!
